Lemon Filling

 

Del-Val Food Ingredients lemon filling concentrate is a great way to make affordable lemon fillings that can easily be customized by adding or not adding lemon juice, lemon zest, and more.  Most donut fillings are purchased in pails and drums which adds unnecessary costs.  Pails and drums can add $0.05 to 0.10/lb cost and then water is shipped around the country adding even more expense.  Our lemon filling powder is easy to use and produces a great tasting economical filling.

Our concentrate contains provides excellent lemon flavor and an acid profile that closely matches nature to give the right mouthfeel and taste.  Our lemon filling concentrate contains citric acid and malic acid to match the main natural acid content in lemons which will bring out the flavor of the filling with a more natural tart lemon-like impact.  We also add the color to give a pleasant yellow color.

Our lemon filling concentrate is made with instant starches to make it easier and faster to make quality donut fillings.  We recommend boiling water to be used in the mixing process, but it is not necessary to boil the filling.

Powdered or freeze-dried lemon juice is available that is perfect for this filling.  Select the amount you desire to create a filling that is uniquely yours. Frozen lemon juice can be used as well as fresh.  However, we recommend boiling the frozen lemon an fresh lemon juice in the water to achieve a proper kill step in fillings that will be stored and not refrigerated. In addition, the amount of sugar in the formula can be varied to make a slightly sweet to an extra sweet.  Your bakery your choice. However, adding lemon juice is not required for making a very economical filling.

A cleaner label version with natural flavor and natural color is available with a larger minimum order per purchase.  This filling is made to order so a 3,000 lb minimum is needed for the clean label version.  Lead time is lager as well.
