Rhamnose is a deoxy sugar that can be produced by microalgae and is found naturally in some plants such as Sophora japonica as well as gum arabic, karaya gums, and citrus fruits.  Rhamnose occurs in nature in its L-form. Rhamnose is a methyl pentose sugar and is considered a rare sugar.


Rhamnose is a white crystalline powder that is free from impurities. Rhamnose is used in the flavor industry as a starting material to make furanones and as a reactionary flavor for Maillard type reaction flavors.  It is a natural sugar.
